Yamitsuki Cabbage

A crisp and flavorful slaw featuring thinly sliced white cabbage tossed in a vibrant Asian-inspired dressing with toasted sesame seeds and a hint of chili. Our signature Sho Dark Stock adds a unique depth of umami to this refreshing side dish.

Serves 10 People (as side dish)

Ingredients:

  • White Cabbage, thinly sliced
    500g
  • Garlic, minced
    4 cloves
  • Toasted Sesame Oil
    15g
  • Brown Sugar
    5g
  • Rice Vinegar
    15g
  • Sho Dark Stock
    30g
  • Sesame Seeds toasted
    2 tbsp
  • Chili Powder (adjust to preference)
    2g
  • Salt
    to taste
  • Black Pepper, freshly grounded
    to taste

Preparation:

  1. Prepare the Cabbage: Ensure the white cabbage is thinly and uniformly sliced.
  2. Sauté Aromatics: In a small pan over medium heat, gently sauté the minced garlic in the toasted sesame oil until fragrant (about 30 seconds). Be careful not to burn the garlic.
  3. Create the Dressing: In a mixing bowl, whisk together the sautéed garlic and sesame oil, brown sugar, rice vinegar (or cider vinegar), and our signature Sho Dark Stock. Stir well to ensure the sugar is dissolved.
  4. Season the Dressing: Add the chili powder, salt, and freshly ground black pepper to the dressing. Taste and adjust seasoning as needed.
  5. Combine and Toss: In a large bowl, combine the thinly sliced white cabbage and the prepared dressing. Toss thoroughly to ensure all the cabbage is evenly coated.
  6. Add Sesame Seeds: Sprinkle the toasted sesame seeds over the slaw and toss gently to distribute.
  7. Chill (Optional): For optimal flavor, allow the slaw to chill in the refrigerator for at least 15-20 minutes before serving. This allows the flavors to meld together.
