- Olive oil
- 105g
- Lemon juice
- 30g
- Sherry vinegar
- 20g
- Brown sugar
- 32g
- Garlic (minced)
- 5g
- SHO Light Stock
- 65g
- Dry thyme
- 0.1g
- Mustard
- 10g
- Salt
- 4g
- Black pepper
- 1.1g
Directions:
1) In a large mixing bowl, combine the olive oil, lemon juice, sherry vinegar, brown sugar, minced garlic, SHO Light Stock, dry thyme, mustard, salt, and black pepper. Mix thoroughly until well combined.
2) Add the chicken to the marinade and coat evenly. Ensure the chicken is well covered with the marinade.
3) Cover with plastic wrap or transfer the chicken and marinade into a sous-vide bag or resealable plastic bag.
4) Refrigerate for 1 hour to 24 hours at 4°C.
